Baked Rice



Ingredients

1 1/2 tablespoons olive oil
1/3 cup finely chopped shiitake mushroom caps

2 tablespoons minced onion

1 1/4 cups uncooked Arborio or other short-grain rice

2 1/2 cups fat-free, less-sodium chicken broth

1/4 teaspoon salt

1/8 teaspoon crushed saffron threads

2 tablespoons minced fresh parsley

1 1/2 teaspoons minced fresh thyme

Mint-Cilantro and Coconut Rice


Ingredients

2 teaspoons olive oil
1 cup uncooked basmati rice
1/4 cup sliced green onion
3/4 cup fat-free, less-sodium chicken broth
1/4 cup light coconut milk
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 tablespoons chopped fresh mint
2 tablespoons chopped fresh cilantro

Kimchi

Ingredients:

1 napa cabbage
1/2 cup salt
1 bunch green onions (sliced into 1 inch pieces)
4 cloves garlic (chopped)
1 inch ginger (grated)
1 cup gochugaru (Korean red chili flakes)
2 tablespoons fish sauce

Directions:

1. Cut the napa cabbage in half, remove the core and slice the cabbage into 1 inch wide strips.
2.Place a layer of cabbage into a large bowl and sprinkle some salt ontothe cabbage. Repeat until all of the cabbage is in the bowl and salted.
3. Let the cabbage sit in the salt for a few hours.
4. Rinse the salt from the cabbage.
5. Mix the cabbage, green onions, garlic, ginger, gochugaru and fish sauce in the large bowl.
6. Place the cabbage mixture into a sealable container leaves a couple of inches at the top.
7. Seal the container and let ferment at room temperature for 2-3 days.
8. Place the container in the fridge and let ferment for a couple more days.

Kimchi Bokkeumbap (Kimchi Fried Rice)

Ingredients:

1 teaspoon sesame oil
2 shiitake mushrooms (sliced)
1 clove garlic (chopped)
1 egg (lightly beaten)
1 cup cooked rice
1/4 cup chicken (cooked)
2 tablespoons kimchi
1 green onion

Directions:

1. Heat the oil in a pan.
2. Add the shiitake mushrooms and saute for a few minutes.
3. Add the garlic and saute for a minute.
4. Add the egg and cook until almost set.
5. Add the rice and chicken and cook until warm.
6. Turn off the heat and mix in the kimchi.
7. Plate and garnish with the green onion.
