Ingredients
1eachchicken
1tablespoonvegetable oil
4eachgarlic clove
1eachonionchopped
2tablespoonsgingerchopped
1eachlemon grass
1/4cuplemon grass
1eachgalangal
1teaspoonturmeric
1teaspoonsalt
2teaspoonscorianderground
2teaspoonssugar
1/4teaspoonblack pepper
28ounceschicken broth
4cupswater
1 1/2tablespoonslemon juice

DirectionsRemove chicken giblets, set aside.
Pull off and discard lumps of fat from chicken.
Cut off wings and leg-and-thigh pieces. Separate back from breast.
Pour oil into 6 quart kettle and place over medium heat.
Add garlic, onion, and ginger and cook, stirring until onion is soft.
Add lemon grass, galangal, tumeric, salt, coriander, sugar, pepper, broth, and water.
Stir then add chicken and giblets (except liver).
Bring to a boil over high heat.
Cover, reduce heat, and simmer until breast is no longer pink when slashed (15-20 minutes).
Remove breast and let cool.
Simmer remaining chicken until meat near thighbone is no longer pink when slashed (15 minutes more).
Lift out legs and thighs, let cool.
Continue to simmer broth. Discard skin from breast, legs and thighs.
Cut meat into bite-sized pieces. Cover and set aside.
Return bones to broth, continue simmering until broth is richly flavored (about 1 more hour).
Strain, discard wings, back, bones, giblets, and seasonings.
Prepare condiments and crisp-fried onions.
Place condiments, onions and chicken in seperate bowls.
Skim and discard fat from broth.
Heat broth until steaming and stir in lemon juice.
Ladle broth into serving bowls.
Let diners add chicken, condiments and crisp-fried onions.

Ingredients : Serves 8-10

Dressing:
3 tablespoons
2 tablespoons
2 teaspoons
1 teaspoon
Large or 2 small cucumbers
Small pineapple, not too ripe
Fresh red or green chilies


Chinese vinegar or other mild vinegar
Sugar
Sambal ulek or crushed fresh chilies
Dried shrimp paste (belacan)
Salt and lemon juice to taste
Method :
  • Peel cucumbers, cut lengthways and remove seeds, then cut into matchstick strips.
  • Cut skin off pineapple and remove all the eyes.
  • Cut pineapple into wedges lengthways, slice off core, then cut flesh into dice.
  • Seed chilies and cut into thin slices.
  • Combine cucumbers, pineapple and chilies in a bowl and sprinkle lightly with salt.
Dressing
  • Wrap the belacan in a foil.
  • Put under a preheated griller or over coals for about 5 minutes on each side.
  • Unwrap and dissolve in the vinegar.
  • Add sugar, chili, salt and lemon juice to taste and toss the dressing with the pineapple mixture.
  • Alternatively, serve the dressing separately.

Bahan-bahan ( 4 orang makan )
Telur rebus
Tauhu - digoreng dan dipotong kecil2
Sengkuang - dipotong panjang2, nipis2
Timun - dipotong panjang2, nipis2
Karot - dipotong panjang2, nipis2
Kangkung (daun dan batang) - dicelur
Taugeh - dicelur
Kacang panjang/buncis - dipotong kecil2 dan dicelur
Kuah kacang

Cara-cara Sediakan semua bahan2 seperti diatas.
Gaulkan semua bahan termasuk kuah kacang di dalam sebiji mangkuk besar. Susun telur rebus di atas (atau jika suka boleh campur sekali dgn sayur td).
Saya guna kuah kacang segera jer sebab tak reti nk buat kuah kacang (maluunyee). hehe. sape2 yg ade resepi kuah kacang, you are welcome to add the recipe.. nnt saya pun leh blaja =)

Bahan-Bahan:
50 keping kulit popia
500 gm tauge
200 gm kacang peas
50 sen udang kering (ditumbuk halus)
1 biji sengkuang (ukuran sederhana)
1 biji timun 200 gm daging ayam
2 biji bawang merah (dimayang)
Sedikit bancuhan tepung gandum (untuk melekatkan kulitnya)
Sedikit minyak untuk menggoreng
Sedikit garam dan serbuk perasa
Cara:
Bersih tauge dan buangkan ekornya. Kemudian toskan. Sengkuang dan timun diparut memanjang. Pijarkan minyak dalam kuali. Tumiskan bawang merah, ayam dan udang kering hingga wangi. Bila telah agak kering, masukkan sengkuang dan kacang peas. Tambahkan garam dan serbuk perasa. Kacaulah hingga cukup masak kemudian angkat. Bentang sehelai kulit popia. Letakkan bahan yang telah dimasak, timun dan tauge kemudian bungkuslah dan gamkan dengan bancuhan tepung gandum tadi. Buat begini sehingga habis. Panaskan minyak dan gorenglah hingga garing. Setelah itu angkat dan toskan minyak.
